9Cr14MoV is a lower-cost stainless steel in the Chinese knife steel family, positioned slightly below 9Cr18MoV in overall performance. It offers decent hardness, good corrosion resistance, and very easy maintenance, making it suitable for beginner-friendly knives and everyday light use. While it lacks strong edge retention compared to higher-end steels, it is practical and widely used in budget production knives.
