What is VG-10 Steel?

VG-10 (often called "Gold Steel" in Japan) is a high-end martensitic stainless steel produced by Takefu Special Steel Co. Ltd in Japan. It is perhaps the most famous Japanese steel in the global culinary world, specifically designed for high-quality kitchen knives.

Key Characteristics

  • The "Gold Standard" for Kitchen Knives: It is the default choice for premium Japanese kitchen cutlery because it offers a near-perfect balance of edge holding, rust resistance, and sharpness.

  • High Hardness: It is typically heat-treated to 60–62 HRC. This allows the knife to be ground to a very acute, thin angle for precision slicing without the edge "rolling."

  • Excellent Edge Retention: Due to its high carbon and vanadium content, it stays sharp much longer than the 440 series or AUS-8.

  • Cobalt-Enhanced Stability: The addition of Cobalt allows for high hardness without extreme brittleness. It also makes the edge more stable during heavy use.

  • Corrosion Resistance: It is highly stainless and resists food acids and moisture exceptionally well.

Chemical Composition

The "VG" stands for V-Gold, representing the high quality of the alloy:

  • Carbon (C): 1.0% (For high hardness and edge retention).

  • Chromium (Cr): 15.0% (For excellent rust resistance).

  • Cobalt (Co): 1.5% (Strengthens the steel and allows for higher hardness).

  • Molybdenum (Mo): 1.0% (Increases toughness and prevents pitting).

  • Vanadium (V): 0.2% (Refines grain for a sharper edge).

Common Applications

  • Premium Japanese Kitchen Knives: Used by world-famous brands like Shun, Tojiro, and Yoshihiro. It is often the "core" of Damascus-clad blades.

  • High-End Pocket Knives: It is a signature steel for Spyderco (used in the Delica, Endura, and many other Japanese-made models).

  • Surgical Equipment: Used where a sharp, sterile, and rust-proof edge is required.

VG-10 vs. 10Cr15CoMoV

As we discussed earlier, 10Cr15CoMoV is the Chinese equivalent of VG-10. While they are chemically similar, VG-10 is often perceived as having a slightly "cleaner" production process and more consistent heat treatment due to its long history in Japan.
