What is Shirogami Steel?

Shirogami (also known as White Paper Steel or White Steel) is the purest high-carbon steel produced by Hitachi Metals in Japan. It is the closest modern equivalent to traditional "Tamahagane" steel used in samurai swords.

The name comes from the white paper used to wrap and identify the steel at the factory. It is the preferred choice for Japanese master chefs who prioritize absolute sharpness over all else.

Key Characteristics

  • Supreme Purity: Shirogami is a very "simple" steel consisting almost entirely of Iron and Carbon, with minimal impurities (phosphorus and sulfur). This purity allows it to take the sharpest edge of any knife steel in the world.

  • The Best Sharpening Experience: Because there are no large chromium or tungsten carbides, Shirogami is incredibly easy to sharpen. It provides a very distinct "feedback" on whetstones, allowing you to achieve a hair-splitting edge in minutes.

  • Wicked Edge "Bite": While stainless steels can sometimes feel "slippery" on food, Shirogami has a famous "bite" that grips and slices through fish and vegetables with zero resistance.

  • Very High Hardness: It is typically heat-treated to 60–65 HRC, depending on the grade.

  • Extremely Reactive (Non-Stainless): Because it has almost zero Chromium, it will rust very quickly. It can turn black or develop orange rust within minutes if left wet. It requires a dedicated "wipe-as-you-go" maintenance routine.

  • Lower Edge Retention: Because it lacks the Tungsten found in Aogami (Blue Steel), its razor-sharpness fades faster. It is designed for chefs who don't mind touching up their knives daily.

The Shirogami Grades

  1. Shirogami #1: The highest carbon content (1.25%–1.35%). It can reach the highest hardness but is the most brittle and difficult to heat-treat.

  2. Shirogami #2: The most popular grade (1.05%–1.15% Carbon). It offers the best balance of toughness and sharpness and is the "standard" for high-end Japanese knives.

  3. Shirogami #3: Lower carbon (0.8%–0.9%). It is tougher and easier to sharpen but doesn't hold an edge as long.

Common Applications

  • Honyaki Knives: The most expensive Japanese knives, forged from a single piece of Shirogami with a clay-tempered hamon line.

  • Traditional Single-Bevel Knives: Used for Yanagiba (sashimi), Deba, and Usuba where extreme precision is required.

  • High-End Woodworking Tools: Japanese chisels and hand planes.

  • Shirogami (White): Purer, easier to sharpen, and can achieve a finer edge.

  • Aogami (Blue): Stays sharp longer and is more durable due to added Chromium and Tungsten.
