7Cr17 Steel (often written as 7Cr17MoV) is a Chinese mid-range stainless steel. It is essentially a modified version of the American 440A steel, but with small amounts of Molybdenum (Mo) and Vanadium (V) added to improve its performance.
In the hierarchy of steels we've discussed, it sits above 3Cr13 and 420J2, but still below the Swedish 12C27.
Key Characteristics
Good Hardness: It can be heat-treated to a hardness of 54–57 HRC. This means it will hold an edge much better than 3Cr13, though it still isn't a "premium" edge-holding steel.
Excellent Corrosion Resistance: With a high chromium content, it is very resistant to rust and staining, making it great for kitchen use or humid environments.
Enhanced Toughness: The addition of Vanadium gives it a finer grain structure, making it tougher and more resistant to wear than basic 400-series steels.
Affordability: It is a very cost-effective steel for manufacturers, providing a "good enough" performance for most casual users.
Chemical Composition
The "7" in the name represents approximately 0.7% Carbon, which is a significant step up from 3Cr13.
Carbon (C): 0.60% – 0.75% (Provides decent hardness and edge retention)
Chromium (Cr): 16.0% – 18.0% (Very high; provides superior rust resistance)
Molybdenum (Mo): 0.75% (Increases strength and hardness)
Vanadium (V): 0.10% – 0.20% (Improves wear resistance and grain refinement)

440A (US Standard - very similar but usually lacks the Vanadium)
8Cr13MoV (Its "big brother" - 8Cr13 has more carbon and holds an edge even longer) [18, 19, 20]
Common Applications
