X40Cr13 (EN 1.4034) is a traditional European martensitic stainless steel containing approximately 0.40% carbon and 13% chromium. It is widely used in commercial kitchen knives, food-processing tools, surgical instruments, and utility blades due to its excellent corrosion resistance and ease of maintenance. Compared to premium knife steels, X40Cr13 offers relatively modest edge retention but compensates with easy sharpening and good toughness. Many German kitchen knife manufacturers have historically used variants of this steel because of its reliability and suitability for food-service environments.
