Shirogami #3 (White Paper Steel No. 3) is the toughest and most "approachable" grade in the White Paper series by Hitachi Metals. While #1 and #2 are designed for extreme hardness and maximum sharpness, #3 is engineered for toughness and ease of use.
It is often used as an entry point for those new to Japanese carbon steels or for tools that require a more durable edge.
Key Characteristics
The Toughest White Steel: With a lower carbon content than #1 or #2, Shirogami #3 is significantly less brittle. It is much more resistant to chipping, making it a safer choice for tasks that involve more "rough" cutting or for users still perfecting their knife skills.
Legendary Ease of Sharpening: Like all Shirogami grades, it is exceptionally pure. It is perhaps the easiest steel in the world to sharpen. It responds instantly to whetstones, making it a favorite for those who want to practice their sharpening technique.
Good Hardness: It is typically heat-treated to 58–60 HRC. While this is lower than the 64+ HRC of Shirogami #1, it is still harder than most standard Western kitchen knives.
Lower Edge Retention: This is the main trade-off. Because it has less carbon and no tungsten, it loses its "razor" edge faster than Shirogami #2 or any of the Aogami (Blue) steels.
Highly Reactive: Even though it is the "budget" or "tough" version, it is still not stainless. It will rust and develop a patina just as quickly as the other White steels.
Chemical Composition
Shirogami #3 has a simplified, lower-carbon formula:
Carbon (C): 0.80% – 0.90% (Provides the toughness and ease of sharpening).
Manganese (Mn): 0.20% – 0.30%
Purity: Maintains the extreme low levels of Phosphorus and Sulfur that define the "White Paper" series.
Common Applications
Entry-Level Japanese Knives: Found in many affordable hand-forged knives where the maker wants to offer the "carbon steel experience" without the high price or brittleness of #1.
General Purpose Tools: Often used for small utility knives, traditional Japanese folding knives, and garden tools.
Laminated Blades: Sometimes used as the outer layers or in specialized "warikomi" constructions where a balance of toughness is needed.
