AEB-L (produced by Uddeholm) is a specialized Swedish stainless steel that has a cult following among knife makers and professional chefs. It was originally developed in the 1960s specifically for razor blades.
It is chemically identical to Sandvik 12C27, but it is produced using a very high-purity process that results in an exceptionally fine grain structure. [5, 6]
Key Characteristics
Extreme Sharpness: Because it was designed for razors, it can take an incredibly fine, "scary sharp" edge. It is arguably the best stainless steel for achieving a hair-splitting sharpness.
Carbon Steel "Feel": Many chefs love AEB-L because it sharpens and cuts like a high-end carbon steel (like 52100) but has the benefit of being stainless.
Incredible Toughness: Despite its ability to reach a high hardness (60–62 HRC), it is remarkably tough and resistant to chipping. This makes it ideal for very thin, high-performance "laser" kitchen knives.
Ease of Sharpening: Unlike modern "super steels" that are a nightmare to grind, AEB-L is very user-friendly on sharpening stones.

Chromium (Cr): 13.00% (Just enough for reliable rust resistance).
Manganese (Mn): 0.60%

AEB-L vs. 14C28N
AEB-L is better for pure sharpness and thin, precise edges (like kitchen knives or razors).
14C28N (which has added Nitrogen) is slightly more rust-resistant and better for general-purpose folding knives.
