8Cr17MoV is a Chinese high-carbon stainless steel that serves as a significant upgrade over the standard 8Cr13MoV. It is essentially the Chinese equivalent of the American 440C or the Japanese AUS-10, but with added Vanadium for better performance.

The key difference between this and the 8Cr13MoV you just asked about is the much higher Chromium content, which drastically improves its resistance to rust.

Key Characteristics

  • Superior Corrosion Resistance: With 17% Chromium (compared to 13% in 8Cr13MoV), this steel is highly resistant to rust, staining, and food acids. It is an excellent choice for humid environments or kitchen use.

  • Good Edge Retention: It can be hardened to 58–60 HRC. Because it has similar carbon to 8Cr13MoV but a better alloy balance, it stays sharp slightly longer.

  • Improved Toughness: The addition of Vanadium refines the grain structure, making the steel less brittle than standard 440C, even at higher hardness levels.

  • High Polish: Due to the high chromium, this steel can be finished to a high satin or mirror polish, making it look more "premium."

Chemical Composition

The name breaks down its primary ingredients:

  • Carbon (C): ~0.80% (For hardness and edge holding)

  • Chromium (Cr): 17.00% (The "17" indicates its high rust resistance)

  • Molybdenum (Mo): Increases strength and resistance to pitting.

  • Vanadium (V): Improves wear resistance and allows for a finer, sharper edge.

Common Applications

  • Outdoor & Tactical Knives: Used by brands like SOG and various Chinese manufacturers for knives that might be exposed to wet conditions.

  • Mid-Range Kitchen Knives: Popular for Chinese-made chef knives because it won't rust easily when cutting acidic vegetables.

  • Folding Knives: Often used as an "upgrade" steel for budget brands looking to offer better corrosion resistance than the standard 8Cr13MoV.
