  • VG-10 (The "Toothy" Slicer): Known for its high carbon and cobalt content, VG-10 takes a very aggressive, crisp edge. It excels in Japanese-style laser thinness and provides a "bite" that is excellent for slicing through tomato skins and proteins.

  • 14C28N (The "Silky" Razor): Originally developed for razor blades, this Swedish steel has an incredibly fine grain structure. It can be sharpened to an extremely keen, smooth edge. While it may lack the aggressive "bite" of VG-10, it glides through food with very little resistance.

  • Corrosion Resistance: Both are excellent, but 14C28N has a slight advantage. It is one of the most stainless steels on the market, making it very low-maintenance in a wet kitchen environment.
