Key Performance Differences
Edge Holding: CPM-15V is in a completely different league. It contains nearly 15% Vanadium, creating a massive volume of vanadium carbides. In abrasive cutting tests, it can outlast D2 by 3 to 4 times. D2 is a good "working" steel, but CPM-15V is a "marathon" steel that refuses to go dull.
Toughness: D2 is actually tougher than CPM-15V. While D2 is often considered "chippy" compared to modern super steels, CPM-15V is one of the most brittle steels available. Because it is so saturated with carbides, it has very little impact resistance. It is strictly a slicing steel; any prying or impact will likely result in a shattered edge.
Maintenance: Both steels are non-stainless. D2 is "semi-stainless" (12% Chromium) and resists rust better than 15V, but both will patina or rust if not oiled. Sharpening CPM-15V is notoriously hard and requires diamond abrasives; standard stones will effectively do nothing to it.
