Sharpness and Edge Performance
Initial Sharpness: Both steels have a high vanadium carbide content, allowing them to take an exceptionally keen edge. However, S35VN typically takes a slightly finer, more refined edge because the addition of Niobium creates a finer grain structure.
Edge Retention: S30V technically has a very slight edge in pure abrasive wear resistance (staying "working sharp" longer during cardboard slicing). However, S35VN is less prone to micro-chipping. Because S30V can be "chippy," its edge may degrade faster in real-world use compared to the more stable edge of S35VN.
Sharpenability: S35VN is noticeably easier to sharpen. The refined grain makes it less stubborn on the stones than S30V.
Corrosion Resistance
Performance: Both steels are highly corrosion-resistant and categorized as excellent stainless steels.
Comparison: They are nearly identical in this category. Both contain 14% Chromium. You will not notice a difference in rust resistance between the two in daily carry environments; both will handle sweat, humidity, and food acids with ease.
