  • Toughness and Stability:
    CPM-10V is generally tougher than S125V. Because S125V is so highly saturated with alloys, it is very "brittle." If the edge is ground too thin, it is prone to micro-chipping. 10V is more resilient to impact, which is why it is used in industrial punches, though it is still not a "tough" steel compared to something like 3V.

  • Corrosion Resistance:
    This is the primary deciding factor. CPM-S125V is a stainless steel and resists rust very well. CPM-10V is a tool steel with low chromium; it will rust and stain easily if not kept oiled.

  • Sharpening:
    Neither steel can be sharpened with traditional stones (Silicon Carbide or Aluminum Oxide). You must use high-quality diamond or cubic boron nitride (CBN) abrasives. Even with diamonds, S125V takes a legendary amount of time to reprofile.

  • Choose CPM-S125V if you want the absolute "king" of edge retention in a stainless package and have the patience (and diamond stones) to maintain it.

  • Choose CPM-10V if you want slightly better impact toughness and "easy" patina development, and you don't mind the maintenance of a non-stainless blade.
