19C27 Steel (specifically Sandvik/Alleima 19C27) is a high-carbon martensitic stainless steel characterized by its extreme wear resistance and high attainable hardness.
While it belongs to the same "Swedish steel" family as 12C27, it is designed for a very different performance profile.
Key Characteristics
World-Class Wear Resistance: Its primary advantage is its ability to withstand abrasion, thanks to a high volume of coarse carbides in its microstructure.
High Hardness: It typically achieves a hardness range of 55–63 HRC after heat treatment.
Edge Retention vs. Sharpness: Because of its coarse-grained structure, it excels at holding a "working edge" for long periods but is significantly more difficult to sharpen than 12C27. It is generally not recommended for knives requiring extreme razor sharpness with thin edge geometries.
Corrosion Resistance: While stainless, its higher carbon content makes it less corrosion-resistant than 12C27 or 14C28N. Manufacturers often recommend surface coatings for knife applications to prevent rust.

Common Applications
Industrial Blades: Its most common use is in industrial settings for cutting abrasive materials like cardboard, paper, and tough fibers.
Japanese Kitchen Knives: It is highly popular among Japanese makers (often marketed simply as "Swedish Steel") for heavier-use kitchen tasks. It is frequently compared to VG10 in performance but is considered tougher and less prone to chipping.
Damascus Core: It is often used as the "core" steel in clad (San Mai) or Damascus blades to provide a hard, durable cutting edge.
