Key Differences
Edge Durability (Retention): 8Cr13MoV wins in this category. It typically contains about 0.8% carbon, nearly double that of the 420C family (0.4–0.5%). This extra carbon, along with small additions of molybdenum and vanadium, creates harder carbides that resist abrasive wear much better than 420C.
Sharpness: Both can take a "scary sharp" edge. However, because 420C has a simpler, finer grain structure and lower hardness (typically 52–54 HRC vs. 57–59 HRC for 8Cr13MoV), it is slightly easier to stropping to a high-polish, hair-shaving finish.
Rust Resistance: 420C is a true stainless steel that is highly resistant to staining, even when exposed to mild acids or blood. 8Cr13MoV is "stainless enough" for most EDC uses, but because of its higher carbon and lower "free" chromium, it is more prone to developing small rust spots (pitting) if left wet or used near saltwater.

Choose 8Cr13MoV for a budget pocket knife or a general-purpose utility tool. It provides a more balanced "working" edge that won't require sharpening after every couple of cuts.
Choose 420C (or 420HC) for diving knives, kitchen paring knives, or fillet knives where maximum rust resistance and the ability to quickly "touch up" the edge are more important than long-term wear resistance.
